Macaroni and Cheese





One of our favorite things around here.... mac and cheese!  Yummy goodness and oh, so simple.  

Boil your macaroni in salted water until almost done (but not quite).  In a separate pan melt butter and saute onion (cut up) in the butter until clear.  Add salt, pepper and lots of garlic.  :)  Add flour and make a roux, stirring often.  Add milk, a little at a time, until you reach the desired consistency.  Add cheese and stir until all is melted.  We use a mixture of cheese, depending on what we have on hand.  Some of my favorite choices include cream cheese, mild cheddar, Velveeta and Monterey Jack.  Typically, I include all 4 of these.  Pour macaroni in 9 x 13 pan and then pour cheese sauce over top.  Toss bread crumbs/cubes with melted butter and garlic then toast them.  Sprinkle toasted garlic/butter bread crumbs over top of mac and cheese and then bake in 350 degree oven for 30 - 45 minutes or until hot and bubbly.
