Roasted Vegetables





Another truly simple recipe.  Slice up your choice of veggies leaving the skins on.  We like to use yellow squash, onions, white potatoes and sweet potatoes.  I also like to use zucchini but I didn’t have any this time around.  When cooking for anyone other than my fellas, I include mushrooms.  :)  I like to put the sliced veggies into a bowl and drizzle with oil, but some prefer to place them directly on the sheet pan and drizzle with oil.  I also sprinkle them liberally with Pampered Chef Rosemary Herb seasoning.  Yum!  Bake in oven at 450 degrees for 20 - 30 minutes until done.  I like to finish ours with a minute or two under the broiler for a little extra browning and crispness.
