Sorry about the photo... this was literally all that was left of the cake by the time we took the picture! Yummy!
Cake
1 package Devil’s Food Cake Mix
1 package (4 serving size) chocolate instant pudding and pie filling mix
4 large eggs
1 1/4 cups water
1/2 cup vegetable oil
Preheat oven to 350 degrees. Prepare 10 inch bundt pan or tube pan.
Combine cake mix, pudding mix, eggs, water and oil in large bowl. Beat at medium speed with electric mixer for 2 minutes (or whisk until smooth). Pour into pan. Bake at 350 degrees for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool in pan for 25 minutes. Invert onto heat resistant serving plate. Cool completely.
Icing
1/2 cup butter
1/4 cup unsweetened cocoa powder
1 tablespoon vanilla extract
3 1/2 cups confectioner’s sugar (powdered sugar)
2 tablespoons milk (or more if needed)
In a saucepan over medium heat, melt butter. Stir in cocoa and vanilla. Place confectioner’s sugar in a large bowl. Pour in cocoa mixture. Beat well (mixture will be extremely thick). Beat in milk a teaspoon at a time, until desired consistency is achieved.
