Egg in Toast




This is one of my favorite quick breakfasts.  I know you can have an egg alongside a piece of toast, but I truly prefer this ‘all in one’ way.  The crispiness of the toast melds with the egg just perfectly.  

Butter a piece of bread on both sides.  Cut out a hole in the middle of the bread.  Place bread and the hole in a hot skillet.  Immediately crack an egg into the hole in the toast.  Sprinkle salt and pepper over top.  Cover with a lid and let cook for just a minute.  (until the egg sets enough that you can flip the whole thing.)  Flip egg/toast over in pan and finish cooking to your desired egg consistency.  (I prefer it to be over easy)
