PW Yogurt Chicken


Once again, a Pioneer Woman recipe was a HIT around here.  It seems we like just about ALL of her recipes!!  Check them out at her website here.  



Here is her Crispy Yogurt Chicken recipe....

4 chicken breasts
6 oz. plain, unflavored yogurt
1 Tbsp. parsley flakes
1 Tbsp. lemon juice
2 to 3 garlic cloves, crushed or 1 tsp. garlic powder
1/2 tsp. each of salt and pepper.
other seasonings if you like (I use PC Rosemary Herb or Montreal Chicken - about 1 tsp.)
nonstick spray
1.5 cups Panko bread crumbs

Mix the yogurt, garlic, parsley and lemon juice together in a bowl.  In a separate bowl place the bread crumbs, salt and pepper and any other seasonings you might choose.  

Spray baking dish with nonstick spray.  Dip the chicken in the yogurt mixture to coat thoroughly.  Then roll the chicken in the Panko crumbs.  Place in baking dish and spray top of each breast with a little spray butter if you like.  Cover with foil and bake at 350 degrees for about 45 minutes (more or less based on what size/piece of chicken you use.... more for bone in).  Then uncover and finish baking until golden and cooked through.
